The best Vegan Pumpkin “Cheesecake” Grain/Dairy/Soy/Egg Free. And Thanksgiving Pictures!

Thanksgiving may be over but Pumpkins are in Style all Winter! We had Pumpkin 3 ways for Thanksgiving, all delicious. We started the day with Danielle Walkers “Pumpkin Spice Muffins “. We created our own  Pumpkin Hummus Appetizer and had the absolute creamiest Vegan Pumpkin “Cheesecake” for dessert. Perfect finish to a perfect Paleo Thanksgiving. I have been begging my Friend to let me share her”cheesecake” recipe with all of you. She does not do the internet or write books, yet. I told her the World needed more Joy and her food provides that. So I cooked her a batch of the Pumpkin Spiced Muffins and asked her really nice if I could write her recipe on my blog and she said, Yes!!!! You are lucky people. A must try for everyone.

 Vegan Pumpkin “Cheesecake” by Sharon Nevin.

Crust 

  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1/2 cup Medjool Dates
  • 1-2 Tablespoon cold water if needed

First blend almonds in blender until almost flour like, then add walnuts and dates. If mixture is not sticking together add a little cold water til sticky. Put in 8-9 inch spring form or tart pan. You can line with parchment paper.

Filling

  • 1 1/2 cups cashews soaked overnight
  • 1/2 cup melted coconut oil
  • 3/4 cup pure pumpkin
  • 1/2 cup pure maple syrup
  • 1 tsp. Cinnamon
  • dash of himalayan salt
  • 1 tsp. vanilla bean powder
  • 1/2 tsp nutmeg fresh ground is best


Drain soaking cashews and blend til almost smooth add all other ingredients and blend for 3 minutes. Add to prepared crust and freeze for at least 4 hours. Overnight works best. Once frozen put in refrigerator and enjoy once it thaws a bit.

Creamy “Carmel” Sauce by Sharon Nevin.

  • 1/2 Cup Cashews soaked for 1-4 Hours
  • 6-8 Large Pitted Medjool Dates
  • 1/8 Cup Distilled Water
  • 1/4 Cup Maple Syrup
  • 1 TBLS. Vanilla Bean Powder
  • Pinch of Himalayan Salt

I can not even believe how good this turned out. Wow it is so creamy and delicious you would never know it is Healthy! If I can do this anyone can. Seriously I have NO kitchen skills.

Thanksgiving is a big day for me. It is my Real Food Anniversary!!! I did not go Paleo but I went Real!  I drank my last can of Coke and ate my last bite of processed food Thanksgiving 2012. I was a HUGE Coke drinker, a total sugar addict. 1 with every meal. Giving it up was scary and life changing. I will never stop being thankful for real food and the knowledge to eat it! Pictured above is me at 200 pounds with a big fake smile on my face. I had perfected that smile!

Our 2nd Paleo Thanksgiving was a complete success! We ate like Queens and Kings and enjoyed our time together cooking. Above is our Appetizers. We had Olives, Pickles, Grain/Dairy/Egg free crackers from Elana’s Pantry. Super easy to make so we made 3 flavors.  Garlic/Rosemary, Dill/Onion and Honey/Cinnamon. We served them with a Pumpkin Hummus(recipe coming soon) and Diane Sanfilippo Almond Herb “Cheese” Dip. .

Vegan Herb Crackers from Elana’s Pantry

  1. In a large bowl, combine almond flour, salt and and Herbes de Provence or any Herb
  2. In a medium bowl, whisk together olive oil and water
  3. Stir wet ingredients into almond flour mixture until thoroughly combined
  4. Roll the dough into a ball and press between 2 sheets of parchment paper to ⅛ inch thickness
  5. Remove top piece of parchment paper
  6. Transfer the bottom piece with rolled out dough onto baking sheet
  7. Cut dough into 2-inch squares with a knife or pizza cutter
  8. Bake at 350° for 9-11 minutes, until lightly golden
  9. Let crackers cool on baking sheet for 20 minutes, then servethank 2

Ella’s highlight of the Meal was the Gerolsteiner Mineral Water with fresh Orange added. Kids are so easy to please sometimes. We spend 12 hours cooking and she likes the Fancy Water!

We had a quiet Thanksgiving this year. Just Me, Andy and Ella, we missed the Teen. She was off enjoying herself, hopefully eating gluten-free. They grow up fast. I am trying to slow down and remember it all.

This was our first ever fresh never frozen Pasture Raised Turkey. It was a gorgeous 11 pound bird. The meat was so moist and dark. I love knowing that my Turkey lived a nice life, running around and eating real food. My Turkey never ate GMO feed and that makes me happy.

This whole table has NO GMO food on it.I bet the cotton table-cloth is GMO.  We work hard to know what we eat and where it comes from. I am truly thankful this year for my Family and Health. You are what you eat, feel and think. Be awesome and real!

One last Dessert I must share. It was so good. I may have made loud inappropriate noises as I opened the oven, and the house filled with the aroma of Local Apples, Cinnamon and Wild Huckleberries. Yesterday was the first time in a long time I did not diffuse any Essential Oils. I wanted to enjoy the real food smells.

We served this with Coconut Bliss Ice Cream and the Raw “Carmel” Sauce. We used the Cobbler topping recipe from Practical Paleo and a blend of local apples, hand-picked wild huckleberries, organic vanilla bean powder, maple syrup, cinnamon and tapioca flour. Such a great meal. I am already planning next year!

My First Leg of Lamb!

My first Leg of Lamb and I am just going for it no recipe! This could be scary Hubby is the chef around here! It was his birthday and I figured the best gift I could give him was a day off in the kitchen. His favorite dinner is Lamb. It is not my favorite, Ella has no appreciation for it and Siena will not even try it. We are going to raise Sheep on our new homestead. I am working really hard to develop my love for Lamb meat! Ella and Siena love petting them , that is a step in the right direction!

People always ask “how do you eat like this all the time”. It may be easier for me because I have the complete support of my Husband. He is special and has a heart so big! We met when I was a single mom with Multiple Sclerosis. That is a lot of heavy baggage. It did not even phase him that I was sick. He just looked at it like I needed him even more. Most men would have run and I would have bought them the shoes!

This is my all time favorite picture of US! The expressions are priceless. You will hear me say all the time that real food healed me. I thought about that statement the other day while watching Andy make us dinner. If real food healed me and he does all the cooking then he healed me! Thanks babe, I am on top of the World again because of you. I love saying that “he healed me”  We just keep getting better together!

Ella started Dads birthday day with breakfast in bed. A banana and tomatoes with his birthday present. A bowl of Paper White flower bulbs. They should bloom in a couple of weeks. Flower’s make us smile.  He also got a coffee with a scramble of Lamb bratwurst, eggs, onions, peppers and potatoes.

I started the dinner by cutting up all these beautiful root vegetable from Rainshadow Organics for this beautiful pasture raised Leg of Lamb from Locavore. Everything above was grown at Rainshadow except the onion and bone broth.

I browned the leg in garlic and the super awesome raw grass-fed butter from Windy Acres Dairy Farm. Look at this butter. It is pictured next to the best organic grass-fed butter you are going to find in a store. Look at how much richer the real butter is. And the taste, holy cow! Go find a Dairy Farmer and try real raw butter. You will thank me!

I put it all in the crock-pot with a spice blend I bought at the Locals Thanksgiving Fair. A blend of mint, oregano, rosemary and thyme all naturally grown in Redmond, Oregon.

After adding all the vegetable, spices, and Lamb I put 2 cups of gelatinous bone broth in and topped and it off with water. Set the crock-pot on high for 6 hours and went on celebrating the Birthday boy.

“Birthday” Leg o Lamb by Beth Schultz

  • 4 Pound Pasture Raised Leg of Lamb
  • Tablespoon Grass Fed Butter
  • 1 Rutabaga
  • 1 Celery Root
  • 1 Onion
  • Head of Garlic use as much as you like
  • 4 Carrots
  • Himalayan Salt and Pepper to taste
  • 1 Tablespoon Rosemary
  • 2 Teaspoons Oregano
  • 1 Teaspoon Mint
  • 2 Teaspoons Thyme
  • 2 cups Homemade Bone Broth
  • Fill the rest with pure water
  • Set crock pot on high for 6 hours.

The roast came out so good I now love Lamb meat. This is the best dinner I have ever made all by myself. Watching Andy happily eating my food brings me joy.

***Now for a Paleo confession I served it over mashed potatoes. Yep the white kind. Actually these are the organic Purple Viking Potatoes  from Rainshadow Organics. Hubby does a work share there every week for free vegetables. I was out-of-town for a couple of weeks this summer and he started bringing home these beauties. He apologized when I got home knowing they are not on the Dr Wahls Paleo Plus diet. I had read all the other Paleo people were doing it,  so I gave them a try.  My mouth was happy, the tummy felt good and I noticed no brain inflammation. I usually react to food pretty fast. Dairy and eggs are an instant headache, brain fog and irritability. I have never had gluten since giving it up. I do not know how I would react and I am not interested in finding out.

I have been eating the potatoes for a couple of months and haven’t noticed any negative effects. I do consciously limit them to a treat. I think the sweet potato is a better choice and is more nutrient dense.  But having options is always nice!

*****I did not start re introducing foods until I was in remission. I am still healing the damage that was done to my brain and gut. But I am not having any type of active Disease anymore. Re introduction will be different for everyone. Go slow and be patient.

Remember be kind to yourself. Stress slows down digestion so you are not getting all your nutrients. Choose to be happy!

I have to be a part of the MORE healthy. Knowing what I know I can not serve FAKE food without guilt. When you know better you do better. And I know better!!! We have a lot of work to do. The house needs a fresh coat of paint and a lot of love. We will sell her as soon as possible. Move into a motor home and go find our own land! Another HUGE change we were going to homeschool soon. Very soon, so why not tomorrow!!! Change is in the Fall air.

We went out to our favorite local farm today Rainshadow Organics with WWOLF Willing Workers on Local Farms. I really did want to paint a sign that read “Will Work for Food” no really I do not have a job. We planted next years organic garlic and shallots. I hope we can come back next year and harvest their tasty food. We were lucky to enjoy tons of their garlic this season.  My husband does a work share there every Tuesday(read Blog “Tuesday the best day of the week!) We have eaten so good all Summer! In exchange for helping pick there weekly CSA boxes he can pick a box for us. There are always ways to make real food more affordable. A garden is also an affordable way to eat in the Summer.

Well we can not live at Sarahlees’s but we will find you your own spot to run and grow! Sarahlee and Ashanti have worked so hard to make this beautiful spot. You can see the love growing and taste it! I can not wait to have my own sheep and a huge organic garden!

Look at all those veggies and this is October. I want this so bad. I am starting to feel it. Leaving my job was HUGE we are one step closer. I want to feed the World real food. Food that makes you feel good. Not for 10 minute’s but for life. I would never give up this feeling for a piece of fake food again.  I know now that my auto immune disease reacts to things that do not come from nature. As long as I feed my body what it was meant to eat it is happy.  I am truly real food inspired!!

We got Turkey!

I was a little worried last week when I realized I had forgotten Thanksgiving! I thought I would never find a Fresh Pastured GMO Free Fed Turkey.  This month has been filled with so much change I have been a bit scattered.  I had saved all of our Recipes from last years first Paleo Thanksgiving. This will be  a breeze. Then I remembered last year I still ate Eggs . I discover my Egg Sensitivity after my Skype chat with DR. Wahls in January.  So many of the recipes have Eggs in them. Back to the drawing board with not much time. I then get a genius idea. Ella and I will write a Thanksgiving Cookbook. A perfect homeschool lesson. We spent the day searching recipes and writing a Menu. Discalimer recipes will not be original. All my favorite authors will be getting credit!  Now we will write them all out, do illustrations and copy them into a special Family Cookbook from Mom. Next year will be a Breeze!

We found a list of Farmer’s at Central Oregon Locavore who had Turkey’s for sale. I looked at the list and Billie’s GMO free Turkey’s stood out. I gave her a call and we made arrangements to pick up our Turkey on Saturday. It would be freshly butchered. I have never had a Fresh not Frozen Turkey. I am so excited to try this Bird!

As we are driving out to Windy Acre’s Dairy Farm we get a call. A Woman had gotten our number from the Farmer and was hoping to carpool to the Farm. It is a 45 minute trek. No need to waste gas. We are already on the road so I offer to just pick her up a Turkey. Windy Acre’s is a Raw Dairy Farm that offer’s Herd Share’s so you can legally purchase Raw Milk in the State of Oregon. Why Raw Milk is a healthier option by Chris Kresser “Cows fed fresh green forage, especially those grazing grass, have been shown to have higher levels of conjugated linoleic acid (CLA) and essential fatty acids in their milk. The pasteurization process also reduces the nutritional quality of milk products. Research has shown a decrease in manganese, copper, and iron after heat treatment. (3) The FDA acknowledges that pasteurization destroys a substantial portion of the vitamin C in milk, and sterilization is also known to significantly impair the bioactivity of vitamin B6 contained in milk. (45) Beta-lactoglobulin, a heat-sensitive protein in milk that is destroyed by pasteurization, increases intestinal absorption of vitamin A, so the supplemental vitamin A in conventional milk may be harder to absorb.”

We never got a picture of a Live Turkey. The only ones we saw were in the cooler. I would have loved to explore the whole Farm. It was slushy out there and I needed to get back to Volunteer at our Locals Thanksgiving Food Fair. Windy Acres is currently raising turkeys, pigs, lamb and calves for the food chain of natural meat as well as chickens for meat and eggs. Seasonally they have blueberries and honey. I told Billie I recently had to give up Butter and she said “what kind of butter do you eat? My Butter? Oh you are bringing home my Butter as a Gift.” she also gifted us a gallon of Raw Milk. I love real food so much but free real food is even more awesome! I did just finish my 3 week Fall Lyme Less Live More Cleanse so tomorrow I will be bringing back the BUTTER coffee. I am praying that I will tolerate her super raw butter and the cystic acne will not come back!

We loved our time at the Farm. Billie showed us all around the Dairy and explained why her Milk was better! She taught us a lot and we will be signing up for her Herd share this week! We are hoping to try Raw Sheep Milk soon. I should not say we, I most likely will not be enjoying. Dairy goes right to my brain. My Gut feels great when I drink Raw Milk and then my brain barely works for a week. I am still holding out hope that one day my Gut will be so healed I will enjoy Milk again!

We picked out the 2 biggest Turkeys both weighed in at 11 pounds.  Billie saw we had room in the Cooler for one more. She knew I was headed to Central Oregon Locavore to Volunteer and one of the Volunteers would need a Turkey. I love thoughtful people. She was right we walked in the door and someone said “wow I need a Turkey!” another win win situation. I am finally delivering real food. Something I can feel good about.

Ella and I spent the rest of the day selling Memberships at Locavore for there Thanksgiving Food Fair. We just committed to volunteering in the Store once a week. Ella is a great little worker. She loves volunteering as much as me. I am loving this Homeschool thing. Getting to teach her while we help feed our Community real food. My dreams are coming true! It has been 2 weeks of Homeschool and I already see Ella’s personalty shining louder. She is getting a new stronger confidence. Exactly what we were going for.

Welcome to my page. I am here because I just can not get enough real food talk in my life. I have to let everyone know that you can feel good too. You are what you eat simple, be real!!! I am still working on figuring out where my shift in reality came from. I was once a negative girl who thought if you never have BIG dreams you will never feel disappointment. Wow let me tell you that is such a false statement. When you tell yourself things like that they become your reality. Be kind to yourself always. Somewhere in my recovery my mind opened up. I am clear now. I know what I want and I am going after it. Please follow us as we search for our homestead, eat lot’s of real food and become a homeschool Family!
Here is my Story.

I got Lyme Disease 10 years ago in the Cascade Mountains at Cultus Lake. It got bad quick. I was Diagnosed with Multiple Sclerosis 6 months later. The day before my oldest daughter turned 6. I will never forget that day 9 years ago. Having both Lyme and MS became very hard to treat. Doctors in Oregon would not treat the Lyme Disease and I had to travel out of state as far as Connecticut on a couple occasions. I had so many different specialists. We tried every antibiotic even a 100 days of IVs antibiotics delivered directly to my heart via a picc line. I did 2 different MS injections one being a small dose of chemo therapy. One lovely side effect of that one is suicidal depression. I was lucky to have a great Nurse Practitioner watching me very closely. My symptoms were getting worse and I was so depressed and sick. I had to stop the shots.

I lost eyesight in 1 eye over 8 times and had lesions on my eye nerves. A total of 17 lesions in my brain and spine on last count. And 13 previous ones that healed after IV antibiotics.  I lost all feeling in my Legs and walked with a cane for a year. I rarely ever wanted to get out of bed and enjoy life. I had given up.

The Doctors best advice was to learn to live with it happily!  Life is all about attitude, right? NO! I wanted to feel good too. I was not me anymore I was a shell of a once happy person. I had heard Doctors say a healthy diet may help with quality of life. It seemed silly to me how could food do anything if there great drugs did nothing?

I loved my SAD Diet(Standard American Diet). I dipped everything in ranch and washed it down with a coke. I thought the joy my taste buds felt also made me feel good. Boy, was I wrong. That food had left me so inflamed.

I went and saw a very alternative Practitioner who studies Iridology. She looked in my eyes and said this will be easy,  you just need good digestion and detox. We will feed your body the most nutritious food, detox the toxins out and treat the parasite’s. You body will then start to heal and your immune system will start to work right. That was 2 years ago. I really did not believe her at the time!

I went vegetarian in the beginning. We did a big 10 day cleanse and I started to feel normal again. There was a glimmer of hope, but something was still missing. We were always hungry. I randomly saw a video on facebook about a DR with MS. My moms friend had been diagnosed recently so we hit play and watched together. The first thing to pop on the screen “recorded on 11/11/11.” Me and my oldest friend love 11 11 in all forms. It is our thing. I knew this video was going to be good.  By the way our other new thing is Lyme Disease we both test CDC positive. What is the likeliness of that? Especially in Oregon where they say we do not have Lyme Disease. That is a whole other story.

Dr Wahls has PPMS that is the bad MS, Primary Progressive. I have RRMS, Relapsing Remitting. Meaning it comes and goes you will have good months and bad months. Mine always seemed to be bad and worse. But with PPMS it is just downhill no recovery. There is no treatment or cure for PPMS.

In the video Dr. Wahls talks about taking all the best MS Drugs and having the top MS Specialist. Yet she continued to get sicker. She then decided to research the disease herself.  She realized she needed to heal her mitochondria. She found the nutrients the Mitochondria needed to thrive and heal. She supplemented them with vitamins and that did not work. She then decided to find them in her food. She developed the Dr Wahls paleo diet and is no longer in a wheelchair. She is biking 18 miles and just started jogging again this year, my hero!!!

 Right now she has clinical trials treating MS with a paleo diet. A clinical trial using REAL FOOD as medicine that is unheard of. And guess what first round was successful in treating fatigue. Shopping a couple weeks later I saw a paleo bar at the store. Made by a local Oregon company, Paleo Eats. It was so good I said I can do this I am going paleo! I asked the owner Debbie on Facebook what book I should buy, she suggested Practical Paleo” by Diane Sanfilippo BS,NC. I ordered it on Amazon. The book came as we were walking out the door to visit the in laws in Texas. I threw it in my carry on and boarded the plane.

I was in love. Diane’s book spoke to me as she breaks down what the grains and the dairy were doing to my auto immune disease. Something clicked for me and I jumped right in. I instantly gave up all grains/dairy/legumes/soy/corn that day and added back in organic pastured animal products. It was very easy to find great grass fed beef in Texas!

That was August 2013, result I have been in remission from my MS and Lyme Disease since December 2013. It took less than 4 months of getting the grains, dairy and GMOs out of my diet for my auto immune disease to shut off. And I lost 85 pounds! Just a huge bonus!

I am walking up hills again! Volunteering in our local food movement because I have the energy. I am a new happy healthier version of me. I love me again! You really learn to appreciate life when it is so close to gone.

A little on GMOs. It just so happens by following this diet and only buying organic and mostly local ingredients we cut out all GMOS from our diet. We do not even eat meat that eats GMO feed. The more I learn about genetically modified food. The more it scares me. It is not natural and I believe the bodies immune system is freaking out because of it. I think this is one big reason we are having a surge of auto immune disease in America.
